Healthy Finds at Costco! 

I am always amazed at all the healthy things available at Costco. Most of the products include huge cost savings too. Here are just a few of the things we found at our most recent trip.

Many of these products store well in the freezer. It is just my husband and I, so these things last us a long time! If we buy large quantities of fresh produce, we use what we can and then store the rest in the freezer. We did this with the gigantic bag of baby kale pictured above. We also store the walnuts in the freezer. Gotta love Costco!

Some Tasty Things I Made this Week

I usually do a good job of planning out my recipes for the week. But for some reason, this week I just didn’t. Luckily I was still able to pull off some healthy meals, mostly because we had just made a trip to Costco. If I have healthy food in the house, I find it so much easier to whip up a healthy meal. Here are two things I came up with on a whim this week.

Brown rice pasta with roasted kale, squash, and organic chicken in a light lemon sauce. I don’t have a recipe for this but all I did was roast the squash, kale, and chicken in the oven and then make a light lemon sauce with fresh lemon juice, garlic, olive oil and a little reserved pasta water. Then I just combined it all together.

Salmon cakes served on a bed of spinach and romaine with a light lemon dressing. If you are interested in making salmon cakes, I have this recipe saved under the “cancer fighting recipes” tab.

First Farmer’s Market

Saturday was the first day of Chicago’s Green City market. It was everything I hoped it would be, and I can’t wait to go back next week. Here is what we took home with us:

  • 3 kinds of fresh greens (spinach, red leaf lettuce, and some different variety of green lettuce I am not familiar with).
  • Honey crisp apples
  • 100% Grass fed beef
  • Asparagus

I just love farmer’s markets. It makes me feel good to buy from the local farmers and the food tastes so much better than anything you could find at the grocery store.
