The other day I whipped together this amazing quinoa salad. I made sure to write the whole recipe down, and I was so excited to share it with you this weekend. The only thing is that I lost the paper!! So, unfortunately I don’t have the exact recipe for you, but I am going to tell you what I put in it so you can re-create it on your own.
This salad is PERFECT for lunch. Make a large batch of it ahead and keep it in the fridge for a few days.
Here is what I used to make it:
- cooked quinoa
- cherry tomatoes
- red onion
- bell pepper
- fresh chopped parsley
- fresh chopped mint
- kalamata olives
- 1 can chickpeas, drained and rinsed
- roasted organic, free range chicken breast, chopped
All I did was combine everything in a large bowl and dress it with fresh lemon juice, olive oil, salt, and pepper.
This salad is so refreshing, especially on a hot summer day.
I am so sorry I don’t have the exact recipe for you. I hope you still try to make it. Play around with the ingredients to suit your own tastes! You may come up with something better than my own!
