There are few foods that taste better to me than a tomato straight from the garden. If you like tomatoes, you know exactly what I am talking about. There is a special flavor, right?
In this recipe I use a ton of fresh tomato and basil to make a no-cook pasta sauce.
I am literally obsessed with this dish! Just serve this dish with a fresh garden salad or steamed broccoli and you will be set!
No Cook Summer Pasta Sauce Recipe
Makes enough sauce for a pound of pasta
- 6 medium or 4 large ripe summer tomatoes, chopped into small cubes (about 1/4 to 1/2 inch)
- 1 large clove of garlic minced
- 2 Tbs chopped fresh basil or more if you like
- 2 Tbs Extra Virgin Olive Oil
- Salt and pepper to taste
Combine ingredients in a bowl and stir to mix. After cooking your pasta, be sure to save about 1/4 cup of pasta water. When mixing the sauce with the pasta, stir in the pasta water to give the sauce some more body.
I used brown rice pasta for this recipe. Brown rice pasta gets kind of creamy when cooked which works well with this sauce. Don’t feel like you have to use brown rice pasta, it’s just a suggestion.
If you want your pasta to have a “lil kick” add a few shakes of crushed red pepper.
You can also use this as a topping for toasted bread slices (bruschetta) or as a topping for grilled chicken.
