This is a follow-up to my quinoa nutrition post from Friday. In Friday’s post, I gave you information about the different ways to use quinoa but didn’t give you a recipe.
I really enjoy eating quinoa for breakfast so I am going to give you my quinoa breakfast recipe.
I actually have to give my husband some credit on this one. He was the one who got us started eating quinoa for breakfast. I had always used quinoa in savory recipes so it was difficult for me to picture it for breakfast. Luckily I keep an open mind to food and decided to give it a try. Boy I am glad I did! Not only do I enjoy the taste of quinoa in the morning, but I feel good starting the day with such a nutritious food!
Quinoa Breakfast Recipe
Serves 2-3 (2 if you have a really hungry husband like me!)
- 1 cup uncooked quinoa, rinsed
- 2 cups water
- 1 banana, sliced
- 1/2 cup unsweetened almond milk, vanilla flavor is great
- 1/2 cup frozen blueberries
- maple syrup or honey or agave nectar
Combine quinoa and water in medium saucepan over high heat. When boiling, reduce heat to low, cover and cook for 15 minutes.
Add in banana, almond milk, and blueberries. Top with your choice of sweetener, but don’t over do it (I use only 1-2 tsp for the whole pot).
Believe it or not, almond butter or peanut butter can be a really tasty addition to warm breakfast cereal. Just don’t add too much, 1 T has about 100 calories!
